My favourite cuisine

 Greetings, my viewer. I'm pretty sure that everyone has their own favourite meal. Be it their mom's cooking or at their favourite restaurant. Well, let me share a little bit of story of my favourite cuisine of Sarawak, the Ayam Pansuh.

Ayam pansuh or manuk pansuh is a dish prepared by cooking chicken meat in a bamboo stalk which filled with water. The water could be the soup and put together with some seasonings and covered with tapioca leave from the cassava plant.

The origin of the ayam pansuh is unknown until now, but the Ibans which is my ethnicity and the Bidayuhs from the west of Borneo always prepare this dish during big festival, such as Gawai Dayak. Gawai Dayak is a thanksgiving festival marking a bountiful harvest. The ayam pansuh is typical among the people of Sarawak, Malaysia and also in West Kalimantan, Indonesia. 

There are many alternatives names for the ayam pansuh such as manuk pansuh, syok tanok,darum bu-uruk. The ayam pansuh is main course dish  which can be served hot or warm. The main ingredient is chicken, garlic, red onion, lemongrass, galangal, ginger, bungkang or salam leaves and red chilies.

The method of cooking ayam pansuh is prepared everything and mix all the ingredients into the bamboo stalk, add a water for the soup and covered the top of the bamboo with tapioca leaves.
Then, put it at an open fire to get that smoky taste on to the chicken. Cook the chicken until it boils and it is ready to serve to many.

What I like about this cuisine because of the smoky sensational whenever you take a bite on to the chicken and the soup is very aromatic because the bungkang leaves and very full of taste. Because it's a traditional cuisine, I would say it's in my culture of cuisine and it's really good. Definitely good.
